A match made in heaven. An Irish whiskey story

I have a special whiskey for you today for review, it’s a lovely 🇮🇪Irish whiskey from the good folks over at @hyde_irish_whiskey! 😊
They have this new release finished in stout casks. Single grain & single malt stout cask finish. Very nice! 😀
History
In 1640 two HYDE brothers, one a blacksmith and one a vintner, set up the HYDE family pub and forge at ‘Tinker Cross’, Gurteen, just outside Bandon, in West Cork, Ireland.



Ten generations later the HYDE family continue that tradition of purveying only the very finest Irish whiskey. This HYDE #8 expression is a triple distilled Irish whiskey slowly finished in a full bodied craft Irish Stout cask from the Cotton Ball Craft Brewery in Cork City.
The Hyde No.8 Heritage Cask is A Match Made in Heaven! As they put it! 😉.
Cotton Ball, five grain, Irish Stout aged in a first fill ex-Bourbon, flame charred, Oak cask for 3 months
Triple distilled HYDE Irish whiskey aged in the Cotton Ball Stout infused oak cask for a further 6 months.
HYDE STOUT CASK Irish Whiskey made from:
- 75% Single Grain; fully matured in a first fill, flame charred, bourbon cask.
- 25% Single Malt; fully matured in a first fill, toasted, Oloroso sherry cask.


Firstly, the craft Irish stout is aged in a first fill, ex-Bourbon, American white oak cask for 3 months. The stout is then disgorged from the cask.
The whiskey is then put into this stout infused cask to ‘finish’ for a further 5 to 6 months.
Review
Alright! Let’s get to the review!
Here are my notes:
Nose: Spicy and complex with notes of coffee, vanilla, fruits and caramel.
Palate: Sweet and malty, caramel, hints of malt and roasted coffee at the end.
Finish: Long. Soft, sweet and creamy.
I think I quite like this one guys 🙂 Have you had the chance to try it? The notes on this are quite enticing 😉.
